Pineapple Salsa Salmon
Ingredients: (Makes Approx. 3-4 pieces)
- 1/2 Pineapple
- 2 Tomatoes
- 1/2 Onion
- Green pepper
- Balsamic
- Salmon (depends on how many you are cooking for I make about three pieces at once)
- 1 1/2 cups ground walnuts
Directions:
Pre - heat oven to 350 degrees
Rub a little olive oil on your salmon so the nuts will stick
Using parchment paper or a plate coat salmon in walnuts Cook for approx. 25 - 30 minutes depending on how you like it done!
While the salmon is cooking you can get the salsa ready! The great thing about this is that it is home made - ever looked at the ingredients in salsa? Unless its organic they sometimes sneak some additives in there. This way you know what your getting - good clean eating.
Cut up your veggies and pineapple. Place in a pan with your balsamic vinegar. Put it on medium until it gets nice and hot. Cover and let it simmer until the salmon is ready. (You can serve the salsa either hot or cold. If you want it cold you have to prepare it ahead of time and put it in the fridge. Tastes great either way)
To Serve:
Put some spinach on the plate add your salsa and top it off with the salmon! Drizzle Balsamic over the plate. You will impress anyone with this one! Healthy , Easy and Delicious :)
